We couldn't resist eating at this noodle house after watching this man making fresh noodles. He started with a lump of dough and then would spin and twist the dough. Each time he would do it the noodle strands would double in number. Once he got the desired number and size of noodles he would cut the lumps off each end and would have a beautiful set of fresh noodles ready to boil and be added to a dish. We both chose the leeks with soy bean sauce with noodles. The scissors are to cut your noodles in to bite size lengths, making it easier to eat them with skinny metal chopsticks.
