Break the Fast- January 2010





We had just under 30 in attendance. Sister Knudsen made Red Hot Vegetable Soup, Homemade French bread and homemade strawberry jam. I made Spiced Pumpkin cookies with Orange Cream Cheese frosting.
You will want the recipe...
Here it is Jessica:
3 tablespoons butter, room temperature
1/3 cup brown sugar
1/4 cup granulated sugar
1/2 cup pumpkin puree
(or pumpkin paste if bought in Korea)
1 large egg
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon cloves
1 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon allspice
frosting
2/3 cup cream cheese room temperature
1/4 cup fresh squeezed orange juice
1 cup powdered sugar.
zest of 2 oranges
Heat oven to 375F. Beat butter and sugars until smooth. Add pumpkin and egg and beat until combined. Combine flour, baking soda and powder, spices and add to pumpkin mixture. Bake for 10 minutes. Cool.
Mix cream cheese, powdered sugar , orange juice and 1/2 of the orange zest until smooth. Frost cooled cookies and sprinkle remaining zest on top.
